It's time for Cooking with Miss Sadie! Miss Sadie Bomar, pictured here with her loving husband, Bill (along with my kids and their friend) are Justin Timberlake's grandparents. Miss Sadie is also known across the country for her wonderful cooking. I know her as my friend. During the year she shares recipes with me in her attempts to turn me into a decent cook. I'll be sharing these recipes with you like I did last month. I'll never match up to Miss Sadie's skills but she has hope for me! My family is hoping she's a miracle worker. Today's recipe is for her tasty meatloaf. Click on the link to get a copy of it. And remember, Miss Sadie keeps most of her recipes in her head so this version was taken from her telling me approximates in measurements since she's a "pinch of this" and a "dash of that" type person. I transcribed it into a recipe, albeit not a fancy one, but you'll still be able to understand it. Trust me, it will be the best meatloaf you've ever made! Oh and happy birthday to Justin who turns 27 today! Miss Sadie’s Tasty Meatloaf 1 ½ pounds of ground Chuck (not ground beef since it has more fat in it says Miss Sadie) ½ tsp thyme ½ tsp of salt ¼ tsp of pepper ¼ tsp of oregano 1 egg 1 can of tomato sauce (those small 8 oz. can size is what we guessed but it’s the small cans) Use ¾ of the can in the meatloaf and the other ¼ of a can to pour over the loaf before putting it in the oven to bake. 6 crackers broken up into fine crumbs Note: Miss Sadie recommends breaking up or crushing about six of the Princess Club crackers or any half sized saltine cracker in those stacked packages like Nabisco Premium in Texas since I’ve never seen any Princess Club brand around here. Basically, any brand of saltine will do. ½ of a medium onion diced ½ of a medium sized bell pepper diced Place the ground chuck into a bowl. Add the thyme, salt, pepper and oregano. Crack one egg into the mixture. Add ¾ of the can of tomato sauce. Crush the 6 saltine crackers and add to the mixture. Add the onion and bell pepper. Get a spoon and mix it all together eventually using your hands to mix it all up. Get a 5 inch wide by 12 inch long rectangular Pyrex bowl. Place the meat mixture in it and pat it into a rectangular loaf 1 ½ inches high throughout. Pour ¾ cups of water around the meatloaf in the bowl. Pour the remaining ¼ of the can of tomato sauce over the meatloaf. Cover the bowl with foil and bake it for 350 degrees for one hour. Enjoy!! Oh and Miss Sadie doesn’t recommend shaping the meatloaf into a loaf like bread shape, which has always been my mistake. “The center never cooks all the way through,” she says. She also says it tastes great with “creamed potatoes and gravy” which some folks call “mashed potatoes and gravy.” I love Miss Sadie! Isn’t she great??? |
