To make up for the lack of postings... some recipes

Well, not a whole lot has been happening. I kind of slogged along through the holidays. Getting slightly flabbier along the way. Then decided about 3 weeks ago, to start over.

I came up with little goals for each week. For instance...

Week 1
Each day, for 5 days:
- Drink 1 liter of water
- Exercise for 30 minutes

Week 2
Each day, for 5 days:
- Drink 1 liter of water
- Exercise for 30 minutes
- Eat 3 servings of fruits / vegetables

... and so on.

Though for the last 2 weeks, the goals had to stay the same. I can't seem to get all of my required fruits, veggie, and whole grains in! Therefore, I am staying with those goals until I can.

I am also tracking my progress in an Excel spreadsheet. This helps, because I tend to get discouraged by daily and weekly weigh-ins. I set the spreadsheet up so that it averages my weight and body fat percentage each week. I see progress! (slow, pitiful progress, but it is there.)

In addition, I am rewarding myself for meeting my goals. Each do I achieve all of them, I get $1. I've got about $30 so far!

Anyhow, last week, I had to make a quickie dinner. I picked up a bag of broccoli slaw, a head of bok choy, and some chicken at the store, and I had the beginnings of stirfry and a side.

Super-Quick Stirfry

Ingredients:

boneless, skinless chicken breasts
bagged broccoli slaw mix
green onions, sliced
Trader Joe's Mandarin Orange Sauce
water or chicken broth
crushed red chilis (optional)

Directions:

Cut chicken into small chunks, and season with salt, pepper, and powdered garlic (or toss some cloves into the pan). Heat skillet to medium high, and spray with oil. Toss in chicken and cook until browned.

Add broccoli slaw mix, and 1/4 cup water or broth. Turn heat down to medium, and sautee until chicken is cooked. Add a couple tablespoons of the orange sauce (it is very sugary, so go easy on it), and the green onions. If you like it a little spicier, add a dash of crushed red chilis. Cook until the green onions start to wilt, then remove from heat.

Serve on brown rice or noodles. I found that it was so crunchy, it really didn't need anything under it. But I served it on a 1/2 cup of brown rice anyway. I use the Uncle Ben's quick microwaveable brown rice.

For a side, I made some bok choy. I just cut it up, and sauteed it in a little water, with a splash of soy sauce, and a dash of toasted sesame oil. I added some red pepper flakes to that too.

All in all, that filling, healthy dinner probably took me 20 minutes -- gotta love that!

Yummy Broccoli Slaw

I still had some broccoli slaw mix left over, so I made a salad with it. I just added some plain fat free yogurt, lemon juice, salt, pepper, raisins and sliced almonds. Though I think it could really use a dash of curry powder too.

Maybe I'll add that tonight. ;c )
