Wow! Fried Grits Are Popular!

More than just a few viewers e-mailed me wanting the full instructions for doing "Fried Grits." So I typed them out and I'm posting them here!
It's relatively simple. First, cook up a perfect pot of grits (use Quick Grits, not Instant Grits!). Then season them with salt, black pepper, butter, and thinly shredded Cheddar cheese until fully combined. Then pour the grits out into a pan (as you saw this morning, I like to use the disposable aluminum pans because I cut down on dishwashing time that way). Then refrigerate the grits--preferably overnight, and covered) until they mold into a firm block. When you're ready to fix 'em, unmold the block, cut 1/2 inch slices off the block, and fry them hot on a non-stick pan (the pan needs to be liberally buttered before beginning to fry...and more butter needs to be added from time to time as the frying continues--it's how you get a nice crust on the outside).
Oh, and . . fried grits goes great with any entree.
