After reading Kristina Rohall's blog, I have a confession to make - I too like fruitcake!
This holiday dessert has gotten a bad rap for a long time. And folks like the late Johnny Carson have spread nasty rumors that, in truth, there is only one fruitcake that is sent from house to house each year, regifted and regifted, until it is eventually used as a door stop or boat anchor.
But I KNOW there is more than one fruitcake. I have seen them made, en masse, by my great aunt Gladys and her sister Marion. In fact, each year, Marion sends a cake to me here at the station, for all of us to enjoy at our holiday party. Both Gladys and Marion have tubs and tubs of fruitcake batter in their kitchen. In years past, they have turned out, no lie, over 500 lbs. of fruitcake!!!
My Grandmother makes a fruitcake too - but its different than most fruitcakes. Its more of a nut cake, with a little bit of candied fruit. Loaded with pecans and walnuts, and occasionally a little bit of sherry for flavor, its one of the best fruitcakes I have had.
So, yes Virginia, there is someone out there who likes fruitcake!
