The shell is no protection

9:02 PM Fri, Mar 28, 2008 |

If you were to open up my refrigerator right now you would see something that resembles egg salad. But this egg salad is very colorful. You see last Saturday night like many people around the country my husband son and I decorated some hard boiled eggs for Easter. They turned out okay. We took pictures they we put them in the refrigerator to make into egg salad later. But when I went to make it into egg salad earlier this week I was surprised to find out that the egg shell, which I thought protected the egg inside, actually didn't keep the dye out. So the only egg that looked somewhat normal was the one we dyed yellow. The rest were blue, red and green.
It's been a while since I dyed Easter eggs. But I've got to tell you I didn't remember the egg salad and deviled eggs Mom made from our dyed eggs being different colors. Okay one of my eggs may have cracked during the boiling process.. but not all of them.
So I guess just a word of warning if you are planning to make something to serve to others from your dyed Easter eggs.. be prepared. It might turn out to be a more colorful dish than you had planned. But I promise it still tastes just as good.
